Ashleigh is an an Accredited Practising Dietitian and full member of the Dietitians Association of Australia (DAA). She completed a Bachelor of Nutrition and Dietetics (Honours) from the University of Newcastle.

Ashleigh provides clients the tools and knowledge necessary to achieve their ultimate health goals. She has experience in providing nutritional therapy across a range of chronic health conditions, including diabetes, overweight and obesity, cardiovascular health, metabolic syndrome, gastrointestinal conditions and food intolerance.

Clinic Locations: Dapto, Corrimal, Maroubra.
I am an Accredited Practicing Dietitian who graduated with a Bachelor of Nutrition & Dietetics (Honours Class I) from the University of Newcastle. Passionate about dietetics, I am committed to continuing my professional development and education within the private practice setting, and help patients to achieve optimal health outcomes through tailor-made dietetic interventions and personalised counselling. I have experience working in a range of clinical areas including hospitals, community health centres and the public health sector.

I am committed to improving the health and wellbeing of individuals and take a vested interest in my patients, ensuring I provide ongoing motivation, education and counselling. My areas of interest include gastro-intestinal disorders, weight management, diabetes, nutrition in pregnancy and eating disorders.

Clinic Locations: Blacktown, Bondi, Chatswood, Darlinghurst, Fairfield, Ingleburn, Mt Druitt, Sydney.

Nicole Moore (B.Sc., Masters Nutr. Diet), Menu Concepts founder, has been a dietitian for the past 12 years, working in private practice for most of her professional life.


Nicole graduated with a Bachelor of Science from Flinders University of South Australia. She completed her Masters in Nutrition and Dietetics at Deakin University in Melbourne in 1997.


Nicole has a broad range of experience in many different areas of dietetics, with particular skill in Weight Loss, Polycystic Ovarian Syndrome (PCOS), Syndrome X, Hyperinsulinemia, diabetes and cholesterol.
